Historical Baking

 

My son had a school project of which he chose the easiest option, me making cookies. He found few recipes online, one looked like it would be bitter, the other had Brandy in it so that was out, then there was a recipe with over 2 cups of sugar, we had a winner!  I spent a good part of the day, all day really, preparing, baking, burning, and packaging nearly 90 cookies!



"Civil War Applesauce Cookies" 

2 1/4 c. sugar
1 1/3 c. shortening
3 eggs
2 tsp. vanilla
1 c. applesauce
6 c. flour
1 tsp. baking soda
2 tsp. baking powder
2 tsp. nutmeg
1 tsp. salt


Cream shortening, sugar, eggs and vanilla. Add applesauce and mix well. Add sifted dry ingredients and blend well. Drop by heaping tablespoon on greased cookie sheets. Flatten and sprinkle with sugar. Bake at 375 degrees for 10-12 minutes. 


They Do Not Brown! {almost true, they are hard to burn but i managed to do it. they are forgiving if you are a couple of minutes late}

Btw, everyone loved the cookies! They are sweet and very soft, even days later. My kiddo has requested them again. I just don't like allspice but i will probably use this recipe again with other flavoring.
